1 (10-oz) pkg frozen sweetened sliced strawberries
1/2 cup cooking oil
1-1/2 cups flour
7/8 cup granulated sugar*
1/2 tsp baking soda
1/2 tsp nutmeg
1/4 tsp salt
1/4 tsp cinnamon
1/2 cup chopped nuts
red food coloring (optional)
Defrost strawberries in unopened package in warm water. When defrosted, preheat
oven to 350 degrees.
Grease and flour one loaf pan. Beat eggs in a bowl until
fluffy. Add cooking oil, granulated sugar, and defrosted berries.
In another bowl, stir together flour, nutmeg, cinnamon,
baking soda, and salt.
Add strawberry mixture and mix just until blended. Add a
little red food coloring if desired. Stir in nuts.
Pour into prepared pan. Bake for one hour or until done.
Note: For 7/8 cup, measure 1 cup less 2 Tablespoons.
