Zucchini-Orange Bread
1 cup zucchini -- finely shredded
1 3/4 cups all-purpose flour
2 1/2 teaspoons baking powder
1/4 teaspoon salt
1/2 cup sugar
1 teaspoon grated orange rind
1/2 cup unsweetened orange juice
1/3 cup frozen egg substitute (or 1 whole egg), thawed
2 tablespoons vegetable oil
1/2 teaspoon orange extract
vegetable cooking spray
Press zucchini between paper towels to remove excess moisture. Combine zucchini,
flour, and next 4 ingredients in a large bowl.
Combine orange juice and next 3 ingredients, stirring well. Add to dry
ingredients, stirring just until dry ingredients are moistened.
Spoon batter into an 8 1/2" x 4 1/2" x 3" loaf pan coated with cooking spray.
Bake at 375 for 40 to 45 minutes or until a wooden pick inserted in center comes
out clean. Let cool in pan 10 minute; remove from pan, andlet cool completely on
a wire rack.
Yield:16 (1/2-inch) slices (98 calories per slice). |
