Quick, Easy -N- Fast Recipes Sour Cream n Chive Twice-Baked Potato Bites

6 small red potatoes
1 t. chopped fresh chives
1/4 t. dried thyme leaves
1/4 t. salt
dash of garlic powder
2 T. sour cream
1 T. butter, melted
1 T. milk
paprika and chopped fresh chives to garnish

Boil potatoes in a medium saucepan until tender, about 15 minutes. Cut potatoes in half. If necessary, cut thin slice from bottom of potato so the shell will sit level. Scoop out center of potatoes to make a shell to stuff.

Mix all ingredients, except paprika and chives, in a bowl. Pipe or spoon potato mixture on shells and place shells on an ungreased cookie sheet.

Broil four to six minutes until hot and lightly browned. Garnish by sprinkling with paprika and chives.

Makes 12 appetizers.
