Chow Mein Casserole
1 T. butter
1 small red bell pepper, chopped
2 cloves garlic, minced
1 pkg. (16 oz.) sliced fresh mushrooms
3 scallions, chopped
1 can cream of mushroom soup
3/4 C. soy sauce
3 C. chunked cooked chicken
1/4 t. black pepper
2 C. (1/2 of a 5 oz. can) chow mein noodles
Preheat oven to 350. Coat a 7 X 11 inch baking dish with nonstick
cooking spray.
In a large skillet, melt the butter. Add the chopped pepper, garlic
and mushrooms; saut� until tender. Stir in the remaining ingredients
except for the chow mein noodles.
Pour into the baking dish and sprinkle with the chow mein noodles.
Bake, uncovered, for 25-30 minutes, or until heated through and
bubbly.
Serves 4-6
