Hot Artichoke Parmesan Spread
14 ounces artichoke hearts, drained
1 cup grated parmesan cheese
1/4 cup mayonnaise
1 clove minced garlic
1 teaspoon grated lemon rind
1/8 teaspoon cayenne pepper
1/8 teaspoon salt
1/8 teaspoon pepper
1 tablespoon grated parmesan cheese
Preheat oven to 350� F. In a food processor, combine artichoke
hearts, 1 cup Parmesan cheese, mayonnaise, garlic, lemon peel, and
cayenne pepper. Process until smooth; season with salt and pepper.
Spread in an even layer in a small baking dish. Sprinkle with 1
tablespoon Parmesan cheese and bake for 15 minutes, or until the top
is golden. |
