Baked Halibut with Tomatoes and Garlic Sauce Recipe
Baked Halibut with Tomatoes and Garlic Sauce
4 halibut fillets (about 6 oz. each)
5 T olive oil
2 medium size tomatoes, sliced 1/2" thick
1 can (6 oz) pitted ripe olives
1 clove garlic
Place fillets in a shallow baking pan. Brush with 1 T oil arrange
tomatoes over top. Bake 375° until fish is opaque in thickest part,
Place garlic and olives in blender and whirl until finely minced.
Add remaining 4 T oil in a thin steady stream; whirl until mixture
forms a paste.
To serve spoon mixture evenly over each fillet.
