Baked Fish With Herbed Vegetables

1 Pound fresh fish fillets (any type fish)
2 Medium zucchini, cut into 2-in julienne
1 Cup sliced fresh mushrooms
3 Tbsp butter or margarine, melted
1 Tbsp lemon juice
1 Tsp chopped fresh basil leaves (or 1/4 Tsp dried basil leaves)
1/4Tsp salt
1/8 Tsp pepper

Heat oven to 350

Place fish in 9-inch square baking pan.

Place zucchini and mushrooms around and over fish.

In small bowl, stir together butter, lemon juice, basil, salt and pepper; pour over fish.

Bake for 30 to 40 minutes or until fish flakes with fork.

Microwave:
Place all ingredients into 9-inch square baking dish as directed above. Cover; microwave on HIGH, turning dish 1/2 turn after half the time, until fish flakes with a fork (7 to 8 minutes)
