Fish L'orange
1 pound fish fillets
1/4 cup white wine
1/4 cup orange juice
4 teaspoons butter, at room temperature
Grated rind of one orange
1 teaspoon salt
1/4 teaspoon pepper
1 orange, peeled and sliced
Place fish in a greased casserole dish. Combine white wine and
orange juice; pour over fish. Refrigerate 1/2 hour.
Preheat oven to 350�
Blend grated rind with butter; dot fish with mixture. Sprinkle with
salt and pepper. Cover dish; bake 1/2 hour.
Serve garnished with orange slices.
