Lemon-Herbed Salmon Recipe

   

Lemon-Herbed Salmon

2-1/2 C. fresh bread crumbs
4 garlic cloves, minced
1/2 C. minced fresh parsley
6 T. grated Parmesan cheese
1 T. dried thyme
2 t. grated lemon peel
1/2 t. salt
6 T. butter
1 salmon fillet (3-4 lbs)

In a bowl combine bread crumbs, garlic, parsley, cheese, thyme, lemon peel, and salt; mix well.

Add 4 T. butter and toss lightly to coat.

Take salmon and pat dry.

Place skin side down in a greased baking dish.

Brush with remaining butter and cover with bread crumb mixture.

Bake 350 for 20-25 minutes or till salmon flakes easily with a fork.

Serves 8
