Quick, Easy -N- Fast Salmon Burgers Recipe
1 can (15 oz.) red or pink salmon, packed in water, drained
8 saltines
1/4 C. diced red pepper
3 T. mayonnaise
1 t. lemon juice
4 drops Tabasco sauce
4 lettuce leaves
1 tomato, sliced
4 hamburger buns
In a medium-sized bowl, remove skin from fish and flake with a fork, mashing
bones. Crush the crackers and add to the bowl. Add red pepper, mayonnaise, lemon
juice and Tabasco; mix well. Shape into 4 patties.
Spray a nonstick skillet with cooking spray and place over medium heat. Cook
salmon cakes, turning once, until lightly browned on each side.
Serve on buns topped with lettuce and tomato.
Yields 4 servings.
