Quick, Easy -N- Fast Hamburgers Smothered With Onions
1 T. olive oil
2 C. thinly sliced red onion
1 t. sugar
1 t. red wine vinegar
1 lb. ground sirloin
1/2 t. salt
1/4 t. black pepper
4 (2 oz.) sourdough rolls
Heat the oil over medium heat in a large nonstick skillet. Add the onions and
cook, stirring occasionally, for 10 minutes. The onions should be evenly turning
golden. Sprinkle the sugar over the onions, stir and continue to cook until they
are very soft and golden, another 7 to 10 minutes. Stir in the vinegar and cook
another minute or so before removing the onions from the heat.
Meanwhile, combine the ground sirloin, salt and pepper and form into 4 patties,
taking care not to compact the meat too much.
Heat a cast-iron skillet coated with cooking spray over medium-high heat. Add
the patties and cook 4 to 6 minutes on each side, or until they are cooked to
desired degree of doneness. (The internal temperature should reach at least
160�F.)
Split the sourdough rolls and place them cut-side down in the skillet to absorb
any pan juices. Place a burger on each roll and top with 1/4 of the onions.
Makes 4 servings.
