Taffy Apple Salad
1 package cook and serve vanilla pudding mix
1 package pineapple jello
1 cup water
1 tablespoon apple cider vinegar
2 cups diced unpeeled red apples
1 cup crushed pineapple, drained
1/2 cup chopped walnuts
3/4 cup nonfat plain yogurt
1/3 cup nonfat dry milk powder
1/2 cup sugar substitute
1 teaspoon vanilla
3/4 cup cool whip lite
In small saucepan, mix dry pudding, jello, water and vinegar. Bring
mix to boil, stirring constantly. Remove from heat and refrigerate
til cool, about 30 minutes.
In large bowl, mix fruit and nuts. Stir in cooled
pudding mix. In medium bowl, mix yogurt and dry milk. Add sugar and
vanilla.
Fold in cool whip. Fold yogurt mix into pudding
mix. Refrigerate at least 30 minutes. Gently stir again just before
serving. |
