Lime Pineapple Salad
1 6 ounces pkg lime jello
2 cups boiling water
8 ounces cream cheese, softened
1/2 cup mayonnaise
3 tablespoons lemon juice
1 1/4 cups ice water
1 20 ounce can crushed pineapple, drained
1/2 cup chopped nuts
Dissolve jello in boiling water, stirring until dissolved. Cream
cream cheese until smooth, then add mayonnaise. Fold cream cheese
into jello, stirring until smooth. Add lemon juice and ice water,
then fruit and nuts. Pour into mold and chill until firm.
Serves 12.
