Quick, Easy -N- Fast Mountain Mashers Recipe

1 1/2 lbs. unpeeled red potatoes, cut into 1-inch cubes
2 T. butter
1 T. minced garlic
1/2 C. milk
1 t. prepared horseradish
salt and pepper to taste

Combine the red potatoes with enough water to cover in a saucepan. Bring to a boil; reduce heat. Simmer for 30 minutes or until tender; drain.

Heat the butter in a saucepan over medium heat until melted. Add the garlic. Saute until light brown. Stir in the skim milk. Cook over low heat just until warm, stirring constantly. Stir in the horseradish. Remove from heat. Beat potatoes in a mixer bowl just until mashed. Add the skim-milk mixture and beat until blended. Season with salt and pepper. The potatoes should be slightly lumpy.
