Sweet Potatoes in Orange Cups

3 oranges
6 medium sweet potatoes, cooked
4 Tbsp butter
1/2 tsp salt
1/2 cup orange juice
1/2 cup seedless raisins
6 marshmallows

Cut oranges in half crosswise. Cut around inside of shells; scoop out pulp; press through sieve or ricer to extract juice. Set aside shells and juice.

Mash potatoes; beat in butter, salt, 1/2 cup reserved orange juice and raisins.

Preheat oven to 350 F.

Fill orange cups with potato mixture, piling up high in center.

Top each with marshmallow; bake in oven for 15 minutes, or until lightly browned.
