Potato Casserole

2 c hot mashed potatoes
1 large pkg (8-oz) cream cheese
1 small onion finely chopped
2 eggs
2 T flour
salt and pepper to taste
1 can French fried onions

Put potatoes into large bowl.

Add cream cheese, chopped onion, eggs, and flour.

Beat on medium until blended. Then beat on high until light and fluffy. Add salt and pepper.

Spoon into a greased 9" square baking dish. Put canned onions over top.

Bake, uncovered, 300� for 35 minutes

6-8 servings

Can be prepared ahead of time, add the canned onions just before baking.
