Quick, Easy -N- Fast Scallion Hash Browns
1 lb. red bliss, or new, potatoes
1 red bell pepper, diced
1 very small red onion, peeled and diced
1 bunch scallions, diced
3 T. balsamic vinegar
salt and pepper to taste
2 T. butter, for sautéing
Boil potatoes until tender. Cool in cold water, drain and quarter. Combine all
the ingredients. Serve at room temperature or, to serve hot, sauté the potato
mixture in the butter.
Makes 4 servings.
