Quick, Easy -N- Fast Crunchy Chicken Nuggets Recipe

1/4 C. milk
1 egg
1 1/2 C. crushed, seasoned potato chips (such as sour cream and onion)
1/2 t. ground black pepper
nonstick cooking spray
1 1/2 lbs. boneless chicken, cut into 40 to 50 pieces
2 T. melted butter

Mix milk and egg in a bowl with a fork. On waxed paper, combine crumbs with pepper. Line a shallow baking pan with foil; coat with cooking spray.

Dip chicken pieces in egg-milk mixture, then roll in crumbs; arrange in a single layer on pan. Let sit 15 minutes. Meanwhile, preheat oven to 425F.

Drizzle butter over chicken; bake for 30 minutes or until chicken is cooked through.

Yield: 4 to 6 servings.
