Fettuccine with Chicken
6 oz. fettuccine
1 1/2 cups sliced fresh mushrooms
1/4 cup sliced green onions
2 tablespoons butter
2 tablespoon flour
1/4 teaspoon salt
1/4 teaspoon ground nutmeg
1/4 teaspoon ground pepper
1 1/2 cups milk
1/2 cup grated Parmesan cheese
2 tablespoons chicken broth
2 cups cubed cooked chicken
1/2 cup sliced pitted olives
Cook, rinse and drain pasta.
Sauce: cook mushrooms and green onions in butter in a skillet for
about 5 minutes (until tender). Stir in flour, salt, nutmeg and
pepper. Add milk. Cook and stir until it thickens and is bubbly. Add
1/2 Parmesan and broth - heat until cheese melts.
Add pasta, chicken and ripe olives to skillet. Stir and cook with
sauce - heat thoroughly.
Serve with sprinkled Parmesan cheese.
