Quick, Easy -N- Fast Turkey Macaroni Skillet Dinner
2 T. olive oil
1 1/2 lbs. ground turkey
salt and pepper to taste
2 medium-sized onions, chopped
3 cloves garlic, minced
1 28 oz. can whole tomatoes, undrained
1 12 oz. can whole kernel corn, undrained
1 C. uncooked elbow macaroni
1 T. chile powder
4 oz. Cheddar or Monterrey Jack cheese, shredded
Preheat an electric skillet to high (425°F.). Add the oil and brown the turkey, stirring frequently, 5 to 6 minutes. Sprinkle lightly with the salt and pepper. Add the onions, garlic, tomatoes, corn and macaroni and heat to boiling.
Reduce the thermostat to medium heat (350°F.), cover and cook until the macaroni is tender, stirring occasionally, about 20 minutes. Stir in the chili powder, sprinkle with the shredded cheese and heat, covered, until the cheese is melted, about 5 minutes. Serve right away.
