Green Rice Recipe


Green Rice

Cook 1 lb rice, drain well.

Grind together, (or pulse in processor)
1 cup parsley or fresh spinach
1 green pepper

Combine rice, green pepper and add:

3/4 cups grated cheese
2 Tb. grated onion
3 Tb. melted butter
2 eggs, beaten
1 cup milk
salt and pepper to taste

Bake in 1 1/2 quart casserole at 350 degrees for 25 minutes.

Serves 8 to 10
