Spanish Skillet Rice
3/4 c. white rice
1/2 c. chopped onion
1 clove minced garlic
1 lb. lean ground beef
1 can 14 oz tomatoes diced
1 c. water
2/3 c. chili sauce
1 T chili powder
dash cayenne pepper
1 t each sugar and salt
1/4 c. chopped green pepper
In skillet, brown rice, onion and garlic in butter, stirring
frequently.
Add beef cook just until meat loses red color. Drain fat. Stir in
tomatoes and other ingredients except green pepper.
Bring to a boil, stir in green pepper.
Cover and simmer 30-35 minutes or until rice is tender. Toss before
serving.
