Peas and Prosciutto
1 c chicken broth
3 lbs fresh or 3 (10) oz pkgs. frozen peas
3 T olive oil
1 med onion, thinly sliced
1/4 lb prosciutto diced
salt and pepper to taste
Bring broth to a boil. Add peas and cook 5-10 minutes depending on
the size. Drain peas.
Heat oil in skillet and add onion cooking until pale yellow. Add
prosciutto and peas. Saut� 3-4 minutes. Season.
