Black Eyed Pea Salad
1 can (15-1/2 oz) black eyed peas, rinsed and drained
1 cup chopped celery
1/2 cup chopped green pepper
1/4 cup chopped sweet red pepper
1/4 cup chopped green onions
1 large tomato, seeded & chopped
2 cups shredded lettuce
2/3 cup fat-free (or regular) Ranch salad dressing
In a bowl, combine all and toss lightly. Serve immediately.
