Ham Pecan Salad 3 c torn lettuce
3 c torn spinach leaves
2 c cubed cooked ham
1 c seedless red grapes, halved
1/4 c sliced green onions
1 (11 oz) can mandarin orange segments, chilled, drained
1/2 c caramelized pecan halves (recipe follows)
Combine all ingredients except pecans. Toss.
Pour dressing over salad and toss to coat
Just before serving add pecans and toss gently

Dressing:
1/4 c oil
2 T cider vinegar
1 T sugar
Put ingredients in a jar and shake well.
Caramelized pecans
Heat 1/4 c sugar in small heavy saucepan, over medium heat, for 4 minutes,
stirring constantly until sugar melts. Add 1/2 c pecan halves; stir until
coated. Remove from heat and pour on foil. Cool and break apart. |
