Overnight Layered Chicken Salad
head lettuce, shredded
1/4 Cup bean sprouts
1 (8-oz) can water chestnuts
1/2 Cup sliced cucumbers
1/4 Cup sliced green onions
2 Cups cooked chicken, cut into 2" strips
6-oz Chinese pea pods
1-1/2 Cups mayonnaise
1-1/2 tsp. curry powder
2-1/4 tsp. sugar
1/2 tsp. ginger
Layer ingredients in order from lettuce to pea pods into large salad bowl.
Mix mayonnaise, curry powder, sugar & ginger. Spread dressing on top of salad.
Let set overnight or for several hours to chill.
Before serving toss & sprinkle with peanuts and cherry
