Radish and Pea Pod Tray 8 to 10
radishes
10 to 12 pea pods
4 or 5 sprigs parsley, chopped
3/4 cup plain yogurt
1/2 teaspoon salt
1 teaspoon freshly ground black pepper
1 tablespoon freshly squeezed lemon juice
Remove any large or damaged leaves from each radish, but leave the small ones
intact, and clip off the dangling root end. Arrange the trimmed radishes in a
circle on a plate.
Remove any strings from the pea pods and arrange the pods on the tray with the
radishes.
In a bowl, mix together the parsley, yogurt, salt, pepper and lemon juice with a
spoon. Taste and adjust the seasonings; the mixture should be tangy and flecked
with green. Transfer the yogurt sauce to a small serving bowl and place it on
the platter with the radishes and peas.
