Sweet Floret Salad
1/2 C. mayo
1/3 C. sugar
1/4 C. vegetable oil
1/4 C. vinegar
1 medium head cauliflower, broken into florets
1 1/2 lbs. broccoli, broken into florets
1 medium red onion, sliced
1 sweet yellow pepper, cut into 1 inch pieces-optional
1/2 lb. sliced bacon, cooked and crumbled
In a small saucepan, combine the mayo, sugar, oil and vinegar. Bring to a boil,
whisking constantly. Cool to room temperature
In a large bowl, combine the remaining ingredients. Add dressing and toss to
Cover and refrigerate for several hours or overnight, stirring occasionally.
Note: Light or Fat-free mayo should not be substituted for the regular mayo.
