2 cans(15 ounces
each) cannellini beans or other white beans rinsed and drained
1 can (6 ounces) tuna, drained
1/3 cup feta cheese, crumbled
1 medium Bermuda or red onion, sliced thin
1/3 cup olive oil
3 Tbl. red wine vinegar
chopped fresh parsley
Mix beans, tuna, cheese and onion in a shallow dish.
Mix oil, vinegar, salt and pepper; pour over bean mixture. Cover and refrigerate
at least 1 hour, stirring occasionally.
