West African Crunchy Cabbage Salad

3 cups finely shredded cabbage
1 cup diced apples
1 cup diced cucumber
1/4 cup raisins
2/3 cup mayonnaise
1 Tbs. lemon juice
1/2 Tbs. vinegar
1/2 tsp. salt
1/4 tsp. sugar
1/3 cup chopped unsalted peanuts

In a medium bowl combine cabbage, apples, cucumber and raisins. Toss to mix.

In a small bowl blend mayonnaise, lemon juice, vinegar, salt, and sugar. Pour over cabbage mixture. Toss to coat well.

Sprinkle with peanuts and chill well.

Serves 6.
