Flaky Biscuits

2 cups sifted flour
4 teaspoons baking powder
3 tablespoons sugar
1/2 teaspoon salt
1/2 teaspoon cream of tartar
1/2 cup butter, chilled
3/4 cup milk, room temperature

Sift together in large mixing bowl: flour, baking powder, sugar, salt and cream of tartar. Cut in butter until bits of butter are size of medium peas. Mix in milk, only until ingredients are blended. Do not overmix!

Form into ball; pat out on floured board to 3/4" thick.

Cut into biscuits using 2 1/2" biscuit cutter. Place on ungreased cookie sheet.

Bake at 475�F for 10 minutes or til golden brown.
