Lemony Stuffed Fish
2 lbs. fresh or frozen fillets
1/4 cup chopped onion
1/4 cup chopped green pepper
1/4 cup chopped celery
2 tbsp. butter
2 cups bread cubes
1 tsp. grated lemon rind
1 tsp. parsley flakes
seasoning (salt & pepper, to taste)
1 tbsp. melted butter
Arrange half the fillets in a greased casserole dish.
Sauté onion, green pepper, and celery in butter until tender. Stir in bread,
lemon rind, parsley flakes, and seasoning. Mix well. Spoon the stuffing over the
fillets, and top with remaining fillets.
Brush with melted butter and sprinkle with chives. Cover and
bake at 450º F. allowing 10 minutes per inch of thickness. Uncover during the
last 5 to 7 minutes of cooking.
Garnish with parsley and lemon slices.
Serves 4 to 6.
