Shrimp Gumbo In skillet with bacon grease combine peppers, celery, onions, garlic, okra, and parsley; cook slowly for 30 minutes. To ham hock and water add ingredients cooked in skillet. To all this add tomatoes, paprika, sugar, Worcestershire, black pepper and salt. Simmer for 3 hours. The last 5 minutes of cooking add shrimp, crabmeat and oysters. Serve over small serving of rice. Serves 12 or more and freezes well. |
