Tuna with Curried Almond Rice
2 7-ounce cans of tuna
3 cups hot cooked rice
1 cup blanched slivered almonds
1/2 tsp curry powder
8 tbsp butter
2 medium tomatoes, peeled and chopped
1 minced garlic clove
1 tsp Worcestershire Sauce
6 tbsp flour
3 cups milk
1 tsp salt
4 crushed peppercorns
Melt 6 of the tbsp of butter in a saucepan. Add tomatoes, garlic, Worcestershire
Sauce, 4 drops of Tabasco, salt & pepper. Cover and simmer 5 minutes. Add flour
and stir til blended. Add milk and simmer til thickened, stirring constantly.
Add tuna, cover and simmer 10 minutes.
Melt other 2 tbsp butter in another pan. Add almonds and
curry, and saute til almonds are golden, stirring constantly. Add almonds to
rice and toss gently.
Serve the tuna mixture over the almond rice, and sprinkle
with a little paprika for color.
