Tuna Sicilian Style
4 tuna steaks
10 mint leaves
1/2 teaspoon salt
1/2 teaspoon pepper
2 tablespoons flour
3 tablespoons olive oil
2 large onions, sliced
1/2 clove garlic, chopped
4 tablespoons tomato paste
1 cup water
Make slits in tuna with point of knife and insert mint leaves. Sprinkle with
salt and pepper, roll in flour and brown both sides in olive oil. Remove tuna
and brown onions and garlic in oil. Return fish to pan and continue browning.
Add tomato paste and water, cover pan and cook slowly 30
minutes. Serve tuna with pan gravy.
