Broccoli Divan Recipe

2 T. butter
2 T. flour
2 C. chicken broth
1/4 t. ground nutmeg
1/2 C. mayonnaise
1/2 C. heavy cream
3 T. sherry
2 packages (10 oz. each) broccoli
1 C. grated Parmesan cheese

For the white sauce, melt butter in saucepan over medium heat; whisk in flour until well blended. Slowly add chicken broth and cook, stirring constantly, until thick. Stir in nutmeg and let sauce cool slightly. Blend in mayonnaise, whipping cream and sherry.

Cook broccoli until just tender and drain. Arrange broccoli in 9 x 13-inch casserole and sprinkle with 1/2 cup of the Parmesan. Pour sauce over all. Top with remaining Parmesan. Bake for 30 minutes.

Serves 8.

Cook's note: Dish may be prepared a day ahead and refrigerated. Bring to room temperature before baking.
