Chile Rellenos Quiche Recipe

10 eggs, beaten
1/2 C. all-purpose flour
1 t. baking powder
1/8 t. salt
2 (4 oz.) cans chopped green chilies
1 pint cottage cheese
4 C. grated Cheddar or Monterey Jack cheese
1/2 C. butter, melted

Preheat oven to 400F. Grease a 9 x 13-inch glass baking dish. In a large mixing bowl, combine eggs, flour, baking powder, salt, chilies, cottage cheese, Cheddar cheese and butter.

Pour mixture into prepared pan. Bake 15 minutes. Reduce heat to 350F; continue baking 20 minutes or until a knife inserted in center comes out clean.

Makes 10 to 12 servings.
