Crockpot Cheesy Potatoes
6 large potatoes, peeled and sliced fairly thick
1 large onion, sliced in thick rings
1 large can mushrooms (drained)
2 cups cheddar cheese (grated)
2 cans cream of mushroom soup (undiluted)
salt & pepper to taste
Layer half of potatoes, onions, mushrooms, 1 can of soup and 1 cup of cheese in
crockpot. Sprinkle salt and pepper on top of soup before adding cheese.
Repeat layers leaving the last cup of cheese out.
Cook on HIGH for 4 hours or until potatoes are done.
During last 20 minutes of cooking add the other cup of cheese. If you don't care
for mushrooms, leave them out.
