Jannie’s French Onion Soup

10 c onions, sliced thin
1 stick butter, 8 T
1 ½ tsp. sugar
½ c sherry
2 ¼ T flour
10 c low sodium beef broth or 10 c water and 6 beef bullion cubes
salt
fresh ground black pepper
slices of toasted French bread
parmesan cheese

Melt butter and add onions. Cook very slowly over low heat, stirring often, about 45 minutes. Add sherry and simmer for 5 minutes. Stir in sugar and flour and cook for 3-5 minutes.

Add 10 c water and 6 beef bullion cubes OR I prefer, 10 c low sodium beef broth. Simmer , partially covered for 30 minutes. Add salt , pepper to taste.

Serve with a slice of French bread in the bowl and Parmesan cheese on the side or a slice of swiss or provolone or gruyere on top broiled under the broiler till melted and slightly browned.
