Seafood Soup
4 Tbsp. butter
1/4 cup grated onions
4 Tbsp. flour
2 Tbsp. tomato paste
4 cups milk
1 pint half and half
1/2 pound fresh crabmeat
1/2 pound shrimp, raw, peeled and deveined
1/2 cup dry cooking sherry
1 tsp. lemon juice
2 tsp. Old Bay seasoning
1 tsp. seasoned salt
2 tsp. Tabasco sauce or your favorite hot sauce
Salt and fresh ground pepper to taste
Melt butter in pan and saute onions for about 3 minutes. Add flour and tomato
paste and mix well. Slowly add milk a little at a time. When mixture is hot, add
half and half, crabmeat, shrimp, sherry, lemon juice, Old Bay, seasoned salt,
Tabasco sauce and salt and pepper. Serve hot.
