Turkey, Rice and Vegetable Soup
6 cups very hot tap water
3 cups frozen mixed vegetables (corn, green peas, carrots, green beans, lima
1 can (16 oz) tomatoes, drained
12 ounces cooked boneless turkey
1 box (4.4 oz) 5-minute chicken flavor long grain and wild rice mix
1/4 cup packed parsly sprigs
Put water and mixed vegetables in a 5 quart pot over high heat; bring to a boil.
Meanwhile, cut up the tomatoes and add to pot.
Cut turkey in 1/2 inch pieces (should be about 2-1/2 cups)
Add to pot with rice and contents of seasoning packet from mix. Return to a
boil; reduce heat; cover and simmer 7 to 10 minutes until rice is tender,
chopping parsley and adding it while the mixture simmers.
Makes about 4 servings.
