Veggie Chowder

1 cup chopped onion
1 clove garlic, minced
1 c. chopped celery
6 c. beef bouillon
28 ounce can tomatoes (crushed)
14 1/2 ounce can stewed tomatoes
3 c. pared potatoes
2 c. sliced carrots
1 can lima beans-rinsed
1 can corn, undrained
1/2 t. salt
1/4 t. pepper
1/2 t. ground thyme
1/2 t. celery seed
2 T. cornstarch
1/4 c. cold water

Add all ingredients to pan, except cornstarch & cold water. Bring to a boil, cover & simmer 45 min. or until veggies are tender. Stir together cornstarch & cold water until smooth, add to soup, stirring constantly, bring to a boil over med. heat, boil for 1 min. Let simmer 10 min.
