Corned Beef Salad Recipe
1 package (3 oz.) lemon-flavored gelatin
1 C. boiling water
3/4-1 C. of mayonnaise
1 can (12 oz.) corned beef
1 C. chopped celery
1/2 green bell pepper, chopped
3 hard-cooked eggs, peeled and chopped
lettuce
Combine gelatin and boiling water in a large bowl; stir until gelatin is
dissolved. Let mixture come to room temperature. Add 3/4 cup mayonnaise and mix
well. Fold in corned beef, celery, green pepper and eggs. Mix well. If needed,
add remaining 1/4 cup mayonnaise.
Turn into a lightly oiled 13 x 9 x 2-inch dish or 1-quart ring mold. Refrigerate until set. Serve on lettuce-lined salad plates.
