Irish Spiced Beef

5 to 7-pound pot or arm roast
2 tablespoons ground cloves
2 tablespoons pepper
2 tablespoons allspice
1 tablespoon cinnamon
1 tablespoon mace
2 tablespoons brown sugar
1/2 cup salt
1 bottle Guiness Beer
Cold water to cover

Combine all ingredients except the beef, water and Guiness. Place beef in bowl and cover with the spice mixture.

Place covered in refrigerator for 24 hours, rubbing spices in 3 to 4 times more.

Remove from refrigerator and place in roasting pan. Add Guiness to water and pour over meat.

Simmer gently for 5 to 6 hours For a spicer beef, leave meat in refrigerator for an extra day, rubbing spices in 3 to 4 times more. Serve with boiled potatoes on the side.
