Parsnip Patty Cakes

1 pound Parsnips
1/2 small onion, chopped finely (optional)
2-3 Tablespoon flour
2-3 T butter, melted
a pinch of mace (my mom said she doesn't add this, but my grandmother did)
salt and pepper to taste
1 Large egg
1/2 cup bread crumbs
Lard or Oil for frying

Peel the parsnips, then cut into coins. Place in a pot of salted water, and cook until parsnips are tender. Drain and then mash parsnips. Add onions, flour, mace, butter, salt and pepper to taste.

Make patties and flatten with hand. Dip into the beaten egg, then dredge in the breadcrumbs.

Fry until browned on each side.

Place on newspaper (I'd use paper towel now) to drain.
