Shamrock Cookies with Green Buttercream Frosting
Cookie recipe
1 cup shortening
4 cups flour
1/2 tsp salt
2 eggs, beaten
1 cup sugar
4 tbls milk
2 tsp vanilla
1 tsp baking soda
Preheat oven to 400. In one bowl, cut shortening into flour until well
combined. In a second bowl, combine eggs and sugar; beat well then add
milk and vanilla, then add baking soda. Add wet mixture into dry mixture
alternately. Stir just until combined then roll out dough onto floured
surface. Cut into shamrock shapes with cookie cutter and place onto
ungreased baking sheets and bake for 9-10 mins or just until the bottom
is barely turning golden. Remove cookies to wire racks to cool. (makes
around 40-50 depending on size of cookie cutter and thickness of cookie)
Green Buttercream Frosting
1 stick butter, softened
3 3/4 cups confectioners sugar
3 tbls milk
2 tsp vanilla
green food coloring
Blend butter with electric mixer on low speed until fluffy, about 30
seconds. Then add all ingredients except coloring and blend on low speed
one minute, then increase the speed to medium and beat until light and
fluffy, 1 minute more. (add a little add'l milk if frosting is too
stiff) Add a few drops of green food coloring until color is uniform and
well combined. |
