Fried Pasta

Assorted shaped pastas; bow ties, wheels, spirals, etc.

vegetable oil

seasoned salt, cayenne pepper, garlic salt, chili powder, cheese flavored popcorn salt or plain salt, etc.

Cook the pasta shapes separately in boiling, salted water till tender yet firm. Do not mix the shapes to help ensure that each piece reaches the same doneness. Drain the pasta thoroughly and pat dry with paper towels.

Heat the oil and fry the pasta, in small batches until golden, about two minutes. Drain on paper towels and immediately sprinkle with your choice of seasoning and toss to mix. Transfer to a rack to cool.
