Chewy Pecan Square
Crust:
1-package (18.25 ounces) yellow cake mix
1-egg
1/3-cup vegetable oil
Filling:
1-cup sugar
4-eggs
1/2-tsp salt
1-cup dark corn syrup
1/4-cup butter or margarine, melted
1-tsp vanilla extract
2-cups chopped pecans
Preheat oven to 350 �F. For crust, combine cake mix, egg, and oil in
a medium bowl. Press mixture into bottom of a greased 9x13-inch
baking pan. Bake 20 minutes.
For filling, beat sugar, eggs, and salt in a large bowl until well
blended. Beat in corn syrup, melted butter, and vanilla. Stir in
pecans. Pour over hot crust.
Bake at 350 �F, 30 to 35 minutes or until brown around edges and
center is set. Cool completely. Cut into 1 1/2-inch squares. Store
in airtight container. Makes about 3 dozen squares. |
