Radish Flower Sandwiches
1/2 cup unsalted butter, softened
1 tablespoon minced chives
1 tablespoon minced flat-leaf parsley
Salt
8 thin slices white bread, crust removed
Decoration:
12 small radishes, very thinly sliced
Fresh chive blades
Fresh parsley sprigs
Whole radishes for flowers
In a small bowl combine butter, minced chives, minced parsley and
minced radish. Season with salt and beat until blended. Spread each
bread slice with 1 tablespoon of herb-radish butter. Cut each into 4
neat squares.
To decorate; place 2 radish slices, slightly overlapping on each
square. Place a chive blade at the bottom to form the stem for the
flower. and a sprig of parsley at the base of each chive blade to
form a leaf.
