Strawberry Meringues Recipe

 

Strawberry Meringues

1/4 cup strawberries, frozen
3 egg whites, at room temperature
1/2 cup white sugar
1/4 cup coconut, shredded
1/4 teaspoon almond extract

Preheat oven to 325 degrees. Cover cookie sheet with parchment paper, or spray with cooking spray.

Place strawberries in food processor; shred to small pieces. Set aside. In medium bowl, beat egg whites until stiff peaks form. Quickly fold strawberry pieces into egg whites; gently stir in sugar, coconut and almond extract. Drop meringue mixture onto cooking sheet by using tablespoon.

Bake in preheated oven 10-15 minutes, or just until meringues begin to brown on top.

Turn off oven and leave meringues in oven for several hours (or overnight), so that they dry out. Serve with fresh strawberries, if desired. Makes 20 Meringues
